Someone on Twitter posted the Japanese commands for choosing different things in the modes: https://twitter.com/nyarise/status/1333697986895908864

Here's my translation (input the commands at the title screen of each mode).

If you press B:

ORIGINAL
Overflow OFF > ON

EXA LABEL
Changes BD > DB

ARRANGE
Changes BD > DB

INBACHI
Changes to EXA label Inbachi

If you press C:

Turns Gadgets off in all modes.

If you press D:
It moves the screen up.

If the joystick is in neutral position:

ORIGINAL and INBACHI start with the original soundtrack, whereas EXA Label and ARRANGE start with the new soundtrack.

If you press RIGHT:

You change to the new soundtrack in ORIGINAL and INBACHI.

If you press LEFT:
You change to the original soundtrack in EXA Label and ARRANGE.

Gadgets are all moved to the bottom of the screen, and the game display is shifted to the top.

trap15 has been teasing more secrets (debug mode?) and I will investigate further once my copy lands.

Yes, I was watching that today! Very nice to see. (They also streamed the rare 2006/5/18 MASTER VER of Pink Sweets at the same time!!)

Slowdown accuracy in Original mode is not quite as good as I assumed it would be, it looks more like 70-80% accuracy instead of 90%. The transitions in and out of slowdown are very fast compared to the PCB, and collecting a lot of stars usually doesn't slow down (like on the PCB), making the whole game feel sped up. Boss appearances and death animations are also much faster. If you like faster-paced games, you might prefer this to the original PCB.

After seeing EXA Label mode played by several top scorers, the little interest I had in this mode disappeared...It's just not for me. I was hoping someone would play X-Arrange but I didn't see that in the time I watched; I always wished I could use the other ships in the X360 Arrange mode, so it would be cool to see them in this version.

A twitter user posted pictures of a Taito i/o board (apparently K91X1147) getting burned up after using it with this game and an EXA motherboard for a few days in a Viewlix cab:

Specifically, the P1 connector line burned (not the JVS line).

This user heard a rumor prior that using a Taito i/o board was not recommended with an EXA motherboard, but the user did so anyway. Just in case anyone else is thinking of trying this, you have been warned.

This is just misinformation.

P1 and P2 lines are voltage coming straight from the PSU. A failing PSU has nothing to do with the system.
The vast majority of operators and collectors using an exA-Arcadia system are connecting a Taito JVS IO with it and have no problems.

The earlier revisions of the Taito JVS IO has issues which is why there are revisions in the first place.

Pretty close here! Sometimes EXA Original Mode lags behind, other times it moves ahead. Like watching a horse race that is nose-to-nose!

Plays really well. I have basically zero experience with SDOJ, but own plenty of other cv1k games, and in terms of lag, I can't really notice a difference. Looks and sounds real nice, the non-tate gadgets are pretty neat. Overall very happy with this.
Haven't played this on PCB, so can't really comment on accuracy, but looking at the comparison videos EOJ posted, it looks very close! Definitely close enough to be more than enough for me :)

Also pleasantly surprised with the Exa hardware. So much more quiet compared to other arcade hardware like Type X2/3, Naomi, CPS2... Can have this on my desk when playing on a supergun without issues. Nice UI and boots pretty quickly too!

Looking forward to spending more time with this.

Enjoying SDOJ Exa quite a lot. Still working through original, but keep dieing to s4 boss (or earlier). It's cool that you can use the arrange soundtrack for the original mode too.

Amazing!  =D I've only been playing for survival (stage 4 so far). I think I need to figure out how to hit 15 billion for those extends  :lol:

It's definitely more forgiving than original mode.

Can't imagine getting to that kind of score. Stage 3 mid boss keeps crushing me. I can get to Stage 3 boss, but need to work on Stage 3 route to hit the cancels so I am not just panic dodging the whole mid section. Game is great though. Really enjoying it.

Thats not a 1cc, they gameover before s5 boss.
Also, those deaths doesnt look like suicides.
For rank control, it would have been better to bomb there, since deaths at max bombs waste rank decrease (since death gives +1 bombs)

Quite right those ST3 boss deaths are not suicides. I just read the video description for the first time, and noticed the author stated they were simply mistakes.

And I didn't watch to the end but assumed it was a 1CC. Oops! Still a good video for low-rank strategies.

I've only played a couple of credits on Exa mode. I'm just enjoying playing regular SDOJ again. It's a funny old game. The first hour or so I'm asking myself why I rated it so highly (the hitbox is ridiculous) and then something clicks and I love it. It's the DOJ sequel I always wanted. Much prefer it to DFK (except DFKBL Bomb mode, that's fun).

Started playing Exa Label properly today. Could hardly be more different to original. Boy do things escalate quickly, it's really quite frantic and a lot of fun once you push the rank higher than you probably should and can barely hyper-cancel bullets fast enough. There's something so satisfying about nabbing a bee or bomb just in time to cancel a load of bullets as well. I loved that in DFKBL, which is certainly the game that comes to mind when playing this. The soundtrack is pretty zany but it fits. I always like it when they drop in bits of the DOJ soundtrack.

Am I right in thinking I should avoid using hypers on the bosses?
